  • Happy Vegan Professor

    As a professor at SU for many years (and vegan since a while before that) I commend Salisbury for the steps it has taken. Thought students dine more often than I have, it was very useful to have the “V” for vegetarian and also “Vn” for vegan, so the vegan choice was not lumped with the vegetarian one.

    SU’s Vegan Candlelight Dinner is a great outreach tool, delicious gourmet affordable night every semester (it used to be once a year as I recall..hopefully some day 2 or more times per semester?) thanks to dietician Kate Cerulli. Just google for Vegan Candlelight Dinner Salisbury…it gets non-vegan and even non-vegetarians to try foods and find out how amazing nondairy cheesecake can be for example. Those candelight dinners are really elegant many course meals, very affordable to those not on the meal plan, and for students on the meal plan, the cost is just one regular meal swipe for a pretty luxurious meal more like an exensive restaurant.

    Their Plato’s Plate features vegan and vegetarian (and GF for those interested) dishes while their Fiesta Express features vegan chili and vegan refried beans. They should do more outreach to non-veg and get even those who don’t care to “be vegan” to try those options for lower fat, no cholesterol, healthier taste..they might end up going vegan later if they choose. Check out their page dining/nutrition.html on salisbury.edu for more, and gently encourage them to keep expanding the vegan options and outreach.

    An all vegan dining facility or just a greater proportion of the meals in the regular ones, would be great. But really for the size univesity it is, they are already off to a very good start!
