the school is getting better about providing vegan options, albeit still tediously limited, but as a vegetarian freshman, the available food did not meet my nutritional needs. Now that I’ve decided to commit to a vegan diet & lifestyle, I have to cook for myself a majority of the time. If I’m grabbing something from the caf, it’s probably a grain of some sort and veggies cooked in their method of choice for the day (and if you’re lucky, it’s the same thing three days on a row!)… or a hummus and veg wrap… maybe a smoothie and some trail mix? once a blue moon (literally once a semester) the school whip up something deliciously vegan friendly… soy portobello mushroom and fried tofu anyone? (Side note: quinnipiac also does not encourage sustainability… seriously- could you believe there was NO WHERE to recycle for sophomores living on campus?? not to mention the school’s positive attitude towards disposable cutlery…)
