    While Mercer has made some improvements to their vegan dining options, the options are still extremely limited. It is impossible to eat vegan on campus without supplementing one’s diet with outside food resources. The only dining hall option at the “Farm” for vegans I have found is the salad bar, which is adequate but limits vegans in calories and variety. The “Caf” serves vegan options occasionally, not daily. These options are also limited. Vegan breakfast foods are limited to oatmeal and fruit. The only plant-based milk offered is soy milk. They have only served vegan desserts a select number of times. The other dining options at restaurants on campus are limited, as Chickfila and Panda Express offer little to know nutritionally valuable vegan options, and Einsteins has removed hummus from their menu as a bagel topping option. Which Wich is the only restaurant on the campus meal plan that offers an adequate amount of variety and options for vegans. Overall, even an unlimited mealplan is insufficient to eat a varied and healthy vegan diet.
