    The vegan options at each meal are not sufficient to support any student’s endeavors in a sustainable vegan diet without forcing them to supplement their diet on their own. The vegan options are usually limp vegetables, egg-less fried rice, and sometimes beans.

    This is absolute nonsense. Talk to any real, live Knox student and they will tell you that we have Meatless Mondays once a term. There are tons of types of milk in the cafeteria, including Lactaid and soy milk. And there are vegan and vegetarian options at every single meal. Knox may not have as many options as other campuses–and this is due largely in part to our small size–but Dining Services is always looking to get more variety.

    I would give my school a C-. I had way higher expectations. They have some really good options some nights, but a decent chunk of the time I’m just eating some form of potato, rice, and a salad. It really sucks for anyone who wants to use the caf on a fairly regular basis.
