According to the Good Food Institute, the sales of animal-free foods grew three times faster than overall food sales in 2021. Research shows that Gen Zers specifically view going vegan as a way to promote compassion toward animals, address the climate catastrophe, lower their carbon footprint, and promote sustainability. I disagree with this letter grade for KSC. We have a lovely vegan bar with many choices of very flavorful meals throughout the day. We also have a soy milk dispenser with the cereals and almond milk and butter are both available as well. The chefs use separate friers and grills for vegan foods (even outside of the vegan line) and there is a vegan option at almost every station. There is also a vegan desert almost every night (and it’s always delicious)! While I believe that our school still could use some improvement (for example, we STILL don’t have a vegan substitute for cream cheese at the breakfast bar), KSC is a pretty great place to be a vegan.
