    In terms of being vegan friendly Capital is making a positive transition. While Parkhurst (Capital’s dining service) is currently providing more vegan options now than they were at the beginning of the 2014-2015 school year, Capital’s animal rights organization Capital for Animal Liberation has been pushing for Parkhurst to adopt a Vegan Mondays policy. Currently the veggie burger has gone from vegetarian to vegan since the start of the campaign for Vegan Mondays, though there is still a great deal more opportunity for options to expand. The salad bar and stir fry station are the two main places that provide vegan eats currently. The heads of Parkhurst at Capital have been receptive to requests for change and to communication with students interested in vegan options. I’m going to submit another report here at the end of this semester to chart the progress of the Vegan Mondays campaign and post any more of the vegan options that Parkhurst has implemented.

    They do offer vegan a vegan option now 🙂 and also offer soy milk!
