    NOT good. On the weekends they close the only station that is specially for vegetarians and vegans. And even at the plant-based food station sometimes the only vegan option is white rice and green beans. Me (a vegan) and even my vegetarian friends are often forced to eat cereal (rain bran… ew) with almond milk for most meals because there’s literally TWO options, and chances are we’ve already eaten both of those options 3 or 4 times in the last 24 hours.

    The vegan dining at Augustana College is decent during the weekdays; they have a station that specifically makes vegan and vegetarian food that is open during meal times, and they have one soymilk machine in the breakfast area. Although they have a limited number of vegan recipes (if I had to guess, about 20 or so), the options are usually quite tasty, and I don’t mind the repetition. However, they advertise having vegan options “everyday”, but the options on the weekends are, honestly, abysmal. The salad bar is open all the time, but the vegan and vegetarian station is closed. I often end up getting a plate of fries and some fruit (since I’m not a fan of salad as it is, much less the limp salads they have out all weekend). Despite this lack vegan food over the weekends, the workers are very nice and are always willing to accommodate. The weekends are really the only issue, and I’m sure it’s fine for vegans who like salads on a regular basis.
