I do not eat at the campus dining halls, but I will eat at the fast service location. Campus has a food truck from The Cardinal, which has a vegan burger with vegan mayo. The coffee shops have vegan turnovers (they are just store bought ones without animal products) and they have plant milks at every location. There is an upcharge for plant milk, despite the appearance that the campus wants to make of being “environmentally friendly”. Every once in awhile, one of the quick service locations will have a veggie sushi. However, with a campus that advertises itself as planet friendly, there is a severe lack of vegan options.

I was here this past summer and I had a very hard time finding food to eat. They had one vegetarian entree a meal – rarely ever vegan. I usually ate from the salad bar, which lacked very many fresh vegetables. While dining during the fall and spring terms may be okay, be prepared if you dine over the summer.
