Research shows that Gen Zers specifically view going vegan as a way to promote compassion toward animals, address the climate catastrophe, lower their carbon footprint, and promote sustainability. I am a junior at Gonzaga, and this year Zag Dining has done a great job at including the vegan students since our population seems to be growing. Zagriculture, a completely Vegan/Vegetarian station, has many student requested options. I believe a lot of the produce is locally sourced too, because one of the farmers came in to visit and promote his tomatoes to us. It is nice to have a meatless option every single day now. With the new cafeteria they built, and a lot of new staff.. they have stepped up their game to make sure vegans are included every single day! I attached a picture of the usual arrangements of food they have. Thanks
